This is very good question.
Cooking vegetables depends on the result you want to achieve. If you want soluble ingredients from vegetables to ascend, you should cook vegetables in cold water and bring to boil.
But if you want vegetables to keep their aroma, put it shortly in boling water. This way membranes quickly close, which that way loose their osmotic features. |
