It depends, Pete.
Sometimes marmelades can be very sweat, like 60% sugar, sometimes only 20% sugar... this percentage makes a big difference! Besides marmelade and jam are different products, though jam also has at least 60% sugar - energetic value is very high.
If marmalede is made from unpilled fruits, maramlade is rich with ballast ingredients- if fruit is unpilled than is not.
About vitamins...
Moistly fresh fruit has lots of vitamin C- when fruit is thermally processed, actually when vitamin C is thermally processed, little vitamin C is left. So, it is hard to say people eat jam or marmalade because is healthy and full of vitamins they eat it becasue is sweat and gooooooood.  |
